Beer Release: Pineapple Upside Down Cake Pastry Sour

We are still wondering why we call it “pineapple” when the rest of the world calls it “ananas”. We decided it’s water under the bridge, and elected to brew rather than think too hard about it. From Florida to the Northwest - we present our Pineapple Upside Down Cake Pastry Sour.

Inspired by Brewer Connor’s Grandma’s Pineapple upside Down Cake recipe, our Pastry Sour utilizes our house lactobacillus culture to produce a distinctly-tart character. A blend of pineapple, peach, lactose, brown sugar, and pecan present a bready, cake-like medium-bodied kettle-sour balanced by a confectionary and tangy finish.

Freshly tapped since Monday April 19th, we have been celebrating in-house with a limited run of complimentary pineapple pins, and a homemade pineapple upside down cake sold in-house. We made sure to duplicate Connor’s Grandma’s recipe for this one, and it’s delicious - so delicious that we put a slice of it into the beer during the brewing process!

Finding the Beer (while supplies last):

  • Six packs are currently available in our brewpub fridge

  • Available for delivery (Bellingham or Regional delivery)

  • Cans will be widely-found on store shelves by 4/23/2021
